Ingredients

  • 1/4 cup canned crushed pineapple (no sugar added)
  • 1 slice white bread, crumbled
  • 1 medium egg
  • 1/4 teaspoon pineapple extract
  • 1/2 teaspoon baking powder
  • dash of nutmeg

Instructions

  1. Beat the egg in a small bowl.
  2. Add the crushed pineapple, crumbled bread, pineapple extract, baking powder, and a dash of nutmeg to the beaten egg and mix well.
  3. Spoon the mixture into 3 non-stick muffin cups.
  4. Bake at 350°F (175°C) for 30 minutes.
