Delicious low-calorie stuffed mushrooms featuring a savory cottage cheese and bread crumb filling, perfect as an appetizer or light snack for health-conscious diners.

Ingredients

  • 12 large mushrooms
  • 1/4 cup chopped scallions
  • 3 tablespoons skimmed milk
  • 1/2 cup low-fat cottage cheese
  • 1/2 tablespoon corn oil
  • 1 tablespoon Italian bread crumbs

Instructions

  1. Remove mushroom stems and chop them finely.
  2. Saute chopped stems and scallions in corn oil.
  3. Add cottage cheese and Italian bread crumbs to the sautéed mixture.
  4. Stuff the mushroom caps with the filling.
  5. Bake in a 425°F oven for 10 minutes.
