Ingredients

  • 1 1/4 cup sugar
  • 1 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons sour cream
  • 1 cup banana, mashed (from 2 to 3 bananas)
  • 1 1/2 cup pastry flour
  • 1 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup nuts (optional)

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs, beaten very lightly, and dissolved baking soda in sour cream; beat well.
  3. Add mashed bananas, pastry flour, salt, and vanilla; mix until well combined.
  4. Pour batter into a well greased oblong pan.
  5. Bake in a 350°F oven for about 35 to 40 minutes until a toothpick inserted in the center comes out clean.
  6. Optional: Top with 1/2 cup nuts before baking or after baking as desired.
