Ingredients

  • 1 lb. large shrimp, cleaned and deveined
  • 1 clove crushed garlic
  • 2 Tbsp. margarine
  • 1/2 c. Dijon mustard
  • 1/4 c. lemon juice
  • 1/4 c. chopped parsley
  • hot cooked rice

Instructions

  1. In a large skillet over medium-high heat, cook and stir the shrimp and crushed garlic in margarine until just pink.
  2. Add the Dijon mustard, lemon juice, and chopped parsley to the skillet and blend well.
  3. Serve the shrimp mixture over hot cooked rice.
