Ingredients

  • 1 1/2 cups soft bread crumbs
  • 1/4 cup butter or margarine
  • 2 tablespoons butter or margarine
  • 1/2 cup chopped green onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 cloves garlic
  • 8 ounces shrimp, cooked, shelled, and coarsely chopped
  • 6 to 8 ounces crab meat, thawed
  • 2 tablespoons snipped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon ground black pepper
  • 2 (1 to 1 1/4 pound) dressed flounder
  • 2 Tbsp. butter or margarine, melted

Instructions

  1. In a 10-inch skillet, cook bread crumbs in butter or margarine over medium heat until golden brown and crisp.
  2. Remove crumbs to a mixing bowl.
  3. In the same skillet, melt additional butter or margarine.
  4. Add green onions, celery, green pepper, and garlic. Cook over medium heat until vegetables are tender.
  5. Add cooked shrimp, crab meat, parsley, salt, red pepper, and black pepper to the bread crumbs and vegetable mixture. Stir well.
  6. Rinse fish and pat dry.
  7. Place flounder on a board with the dark side up. Make a slit in the center of the fish along the backbone to create a pocket on both sides of the slit.
  8. Loosely stuff the fish with the bread mixture.
  9. Place the stuffed fish in a greased 15½ x 10½ x 2-inch baking dish.
  10. Brush the fish with melted butter.
  11. Bake in a 400°F oven for about 20 minutes or until the fish flakes easily with a fork.
  12. Transfer the fish to a serving platter.
  13. Garnish with lime slices and green onion if desired.
