Ingredients

  • 6 hard-cooked eggs
  • 3/4 cup shredded Monterey Jack cheese
  • 1/3 cup mayonnaise
  • 1 tablespoon finely chopped dill pickle
  • salt to taste
  • paprika for color

Instructions

  1. Cut the hard-cooked eggs in half lengthwise and remove the yolks.
  2. Mash the yolks in a bowl until smooth.
  3. Combine the mashed yolks with mayonnaise, chopped dill pickle, shredded Monterey Jack cheese, and salt.
  4. Refill the egg whites with the yolk mixture.
  5. Sprinkle the tops with paprika for color.
  6. Serve immediately or refrigerate until ready to serve.
