Ingredients

  • small firm green tomatoes
  • 1 clove garlic
  • 1 stalk celery
  • 1 hot green pepper
  • 1 head dill or dill seed
  • 2 qt. water
  • 1 qt. cider vinegar
  • 1 c. salt

Instructions

  1. Select small firm green tomatoes.
  2. Leave stems on.
  3. Pack tomatoes in sterilized quart jars.
  4. Add garlic, celery, green pepper, and dill or dill seed to each jar.
  5. Combine water, vinegar, and salt in a pot for about 8 quarts.
  6. Cook the mixture for 5 minutes.
  7. Fill jars to 1/2-inch from the top with the hot mixture.
  8. Seal the jars.
  9. Boil Mason jar lids for 10 minutes to seal.
  10. Put on rings after sealing and while jars are hot.
  11. No additional processing is needed.
