Ingredients

  • 1 3/4 cups corn meal
  • 3 1/2 cups biscuit flour
  • 1 teaspoon salt
  • 2 cans creamed corn
  • Almost 1 tablespoon baking powder
  • 8 extra large eggs
  • 1 pound melted butter

Instructions

  1. Mix thoroughly the corn meal, biscuit flour, salt, creamed corn, baking powder, and eggs.
  2. Add melted butter to the mixture.
  3. Mix thoroughly until well combined.
  4. Whip gently to incorporate air.
  5. Pour the batter into buttered pans.
  6. Bake at 400°F until golden and cooked through.
