Ingredients

  • 3 cups sugar
  • 1 cup milk
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon salt
  • 2 squares unsweetened chocolate or 6 tablespoons cocoa
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions

  1. In a large saucepan over medium heat, heat the sugar, milk, corn syrup, salt, and chocolate (or cocoa) to boiling, stirring frequently.
  2. Carefully set a candy thermometer in place and cook, without stirring, until the temperature reaches 238°F (soft ball stage). This takes about 10 minutes.
  3. Remove from heat and immediately add butter and vanilla.
  4. Do not stir.
  5. Cool the mixture, without stirring, to 110°F or until outside of the saucepan is lukewarm.
  6. When the mixture is cool, beat with a wooden spoon until it becomes thick and begins to lose its gloss.
  7. Quickly stir in the chopped pecans.
  8. Pour the fudge into a buttered 8 x 8-inch pan.
  9. Cool the pan on a wire rack.
  10. Cut into 1 1/4-inch squares.
