Ingredients

  • 1 lb. dried black beans or 4 cans black beans
  • 2 large carrots, chopped fine
  • 1 1/2 large onions, chopped

  • 4 cloves garlic, minced

  • 1 can Ro-Tel tomatoes with hot chilies
  • 3 bouillon cubes (beef, chicken or vegetable)
  • 1/2 cup lemon juice

Instructions

  1. Choose either 1 pound of dried black beans or 4 cans of black beans.
  2. If using dried beans, soak them according to the package instructions and do not drain the soaking water before proceeding.
  3. Set the beans aside.
  4. Chop the carrots finely, peel and chop the onions, crush the celery stalks, and peel the garlic.
  5. In a large pot, heat olive oil over medium heat.
  6. Add the chopped onions, carrots, and crushed celery; cook until vegetables are softened.
  7. Add minced garlic and cook for another minute.
  8. Add the black beans (drained if canned or soaked dried beans with soaking water) to the pot.
  9. Pour in the Ro-Tel tomatoes with chilies and add bay leaves.
  10. Crumble the bouillon cubes into the soup.
  11. Bring to a boil, then reduce heat and simmer for about 45-60 minutes if using dried beans, or 20-30 minutes if canned, until flavors meld and beans are tender.
  12. Remove bay leaves from the soup.
