Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups chopped apples
  • 1 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda

Instructions

  1. Cream butter with sugar until light and fluffy.
  2. Beat in eggs one at a time.
  3. Add chopped apples and vanilla extract; mix well.
  4. In a large bowl, combine flour, cinnamon, and baking soda.
  5. Mix the dry ingredients into the apple mixture until just combined.
  6. Core 2 to 3 apples and cut into thin wedges.
  7. Arrange some apple wedges on the sides of a well-greased 9-inch round, 1 1/2-inch deep cake pan.
  8. Pour batter into the pan and level the surface.
  9. Arrange remaining apple wedges on top of the batter.
  10. Drizzle 2 tablespoons of melted butter over the top.
  11. Bake at 350°F (175°C) for 55 minutes, or until a toothpick inserted in the center comes out clean.
  12. Glaze the apple topping with 1/4 cup melted currant jelly before serving.
