Double Apple Cake

- Cream butter with sugar until light and fluffy.
- Beat in eggs one at a time.
- Add chopped apples and vanilla extract; mix well.
- In a large bowl, combine flour, cinnamon, and baking soda.
- Mix the dry ingredients into the apple mixture until just combined.
- Core 2 to 3 apples and cut into thin wedges.
- Arrange some apple wedges on the sides of a well-greased 9-inch round, 1 1/2-inch deep cake pan.
- Pour batter into the pan and level the surface.
- Arrange remaining apple wedges on top of the batter.
- Drizzle 2 tablespoons of melted butter over the top.
- Bake at 350°F (175°C) for 55 minutes, or until a toothpick inserted in the center comes out clean.
- Glaze the apple topping with 1/4 cup melted currant jelly before serving.
