Ingredients

  • 1/3 cup soft shortening
  • 1 1/2 cups sugar, divided
  • 1 egg
  • 1 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • 6 tablespoons melted butter
  • 1 teaspoon cinnamon

Instructions

  1. Cream the shortening and 1 cup of sugar until light and fluffy.
  2. Add the egg and beat well until combined.
  3. In a separate bowl, sift together the all-purpose flour, baking powder, salt, and nutmeg.
  4. Gradually add the dry ingredients and milk alternately to the egg mixture, beginning and ending with the dry ingredients, mixing after each addition.
  5. Fill greased muffin pans two-thirds full with the batter.
  6. Bake in a moderate oven at 350°F (175°C) for 20 to 30 minutes or until golden brown.
  7. Remove the muffins from the pans immediately and brush them with melted butter.
  8. Combine the remaining 1/2 cup sugar and cinnamon in a bowl, then roll the buttered muffins in this mixture to coat.
