Ingredients

  • 36 dove breasts, boned and diced
  • 1/2 lb. butter
  • 1 large purple onion, diced
  • lemon pepper to taste
  • 1-1/2 lbs. potatoes, diced
  • garlic salt to taste
  • 1 (16 oz.) jar salsa
  • 4 oz. can diced chili peppers
  • 12 large flour tortillas
  • 1 lb. Monterey Jack cheese, shredded

Instructions

  1. In a large skillet over medium heat, cook the diced dove breasts and diced onion in half of the butter, seasoning with lemon pepper. Cook for 10 minutes, then set aside.
  2. In the same skillet, melt the remaining butter and fry the diced potatoes, adding lemon pepper and garlic salt to taste.
  3. Add the cooked dove meat and onions back into the skillet with the potatoes. Stir in the salsa and diced chili peppers.
  4. Simmer the mixture for 15 minutes, stirring frequently.
  5. Spoon the meat and potato mixture into warm flour tortillas. Cover with shredded Monterey Jack cheese and green taco sauce.
  6. Fold the tortillas and serve immediately.
