Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups cooking oil
  • 1 1/2 teaspoons vanilla
  • 2 cups diced bananas
  • 1 (8oz) can crushed pineapple with juice

Instructions

  1. Sift dry ingredients into a large bowl.
  2. Make a well in the center and break eggs into it.
  3. Add oil, vanilla, diced bananas, and crushed pineapple with juice.
  4. Stir, do not beat, until well blended.
  5. Pour batter into a well-greased 9- or 10-inch tube pan.
  6. Bake at 350°F for 1 hour and 20 minutes.
  7. Cake will crack on top.
  8. Set pan on a rack to cool.
  9. Run a knife around the edges of the pan and turn out to cool.
