Ingredients

  • 2 to 3 slices bacon
  • 1 small onion, finely chopped
  • 1/2 small green bell pepper
  • 2 cups potato cubes
  • salt

Instructions

  1. Cut bacon slices into 1-inch pieces.
  2. Fry bacon until crisp; remove from pan and set aside.
  3. Save bacon fat in the pan.
  4. Add potato cubes, salt, and pepper to the bacon fat and cook until almost tender.
  5. Add chopped onion and green bell pepper, and cook until lightly browned on the bottom.
  6. Turn the mixture to brown on the other side and serve.
