Ingredients

  • 1/2 stalk celery
  • 1 loaf bread
  • 4 or 5 eggs
  • 1 large onion
  • 1 stick margarine or butter
  • salt and pepper
  • sage
  • poultry liver

Instructions

  1. Dice the bread or break it apart and dry in a very low (200°) oven. Cool.
  2. Meanwhile, melt 1 or 1 1/2 sticks of margarine or butter and sauté the chopped liver and heart.
  3. Add chopped celery and onion to the sauté and simmer for about 10 minutes.
  4. Cool the mixture.
  5. When both the bread and mixture are cool, mix them thoroughly together.
  6. Add beaten eggs, to which you have added a little milk, sage, salt, and pepper.
  7. Mix well; add a little more milk if needed.
  8. Let the mixture stand for 1 hour or overnight, covered, in the refrigerator.
  9. Before stuffing the bird, if it looks dry, add a little more milk.
  10. The dressing should be wet but not soggy.
