Dried Fruit Risotto

Ingredients

  • 2 cups uncooked Arborio rice
  • 4-5 cups Apple or Pineapple juice
  • 2 tablespoons butter
  • 4 tablespoons Olive oil
  • 1 1/2 cups Swiss cheese diced
  • 1/2 cup dried cranberries
  • 1/2 cup dried figs (diced)
  • 1/2 cup dried apricots
  • 1/2 cup your choice dried fruit
  • salt,pepper to taste
  • 4 cloves garlic
  • 1 medium onion
  • 2 teaspoons dry sage

Instructions

  1. Sautee fruit,onion, and rice in butter and Olive oil for 5-6 minutes. Add garlic and sage.
  2. Sautee 2-3 minutes.
  3. Slowly add juice, one cup at a time over medium heat, until rice is fully cooked.
  4. Add more juice if necessary.
  5. Finally, add cheese until melted.
  6. Garnish with fresh chopped parsley before serving.
