Dried Fruit Risotto
Ingredients
- 2 cups uncooked Arborio rice ⓘ
- 4-5 cups Apple or Pineapple juice ⓘ
- 2 tablespoons butter ⓘ
- 4 tablespoons Olive oil ⓘ
- 1 1/2 cups Swiss cheese diced ⓘ
- 1/2 cup dried cranberries
- 1/2 cup dried figs (diced) ⓘ
- 1/2 cup dried apricots ⓘ
- 1/2 cup your choice dried fruit ⓘ
- salt,pepper to taste ⓘ
- 4 cloves garlic ⓘ
- 1 medium onion ⓘ
- 2 teaspoons dry sage ⓘ
Instructions
- Sautee fruit,onion, and rice in butter and Olive oil for 5-6 minutes. Add garlic and sage.
- Sautee 2-3 minutes.
- Slowly add juice, one cup at a time over medium heat, until rice is fully cooked.
- Add more juice if necessary.
- Finally, add cheese until melted.
- Garnish with fresh chopped parsley before serving.
