Dudsedia is a hearty chicken and rice casserole with rich tomato flavors, colorful vegetables, and aromatic spices, perfect for comforting family dinners.

Ingredients

  • 1 1/2 lb chicken
  • 2 onions
  • 1 cup uncooked rice
  • 5 carrots
  • 3 celery pieces
  • 24 oz can tomato juice
  • 8 oz can whole tomatoes
  • 1 Tbsp Crisco
  • paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash, dry, and season the chicken; set aside.
  3. Wash and drain the rice.
  4. Boil the celery and carrots in water for 2 minutes; save the water.
  5. Saute the onions with Crisco until translucent.
  6. Add paprika to the onions and stir to change color.
  7. Add rice, chicken, celery, and carrots to the onion mixture. Add enough of the reserved water to cover the chicken.
  8. Place the mixture in the oven and cook for 30 minutes.
  9. Add the canned tomatoes and tomato juice to the casserole.
  10. Continue cooking in the oven for an additional hour until the chicken is cooked through.
