Instructions
- Preheat oven to 350°F (175°C).
- Wash, dry, and season the chicken; set aside.
- Wash and drain the rice.
- Boil the celery and carrots in water for 2 minutes; save the water.
- Saute the onions with Crisco until translucent.
- Add paprika to the onions and stir to change color.
- Add rice, chicken, celery, and carrots to the onion mixture. Add enough of the reserved water to cover the chicken.
- Place the mixture in the oven and cook for 30 minutes.
- Add the canned tomatoes and tomato juice to the casserole.
- Continue cooking in the oven for an additional hour until the chicken is cooked through.
