Ingredients

  • 10 oz. frozen broccoli spears
  • 1/2 cup grated Parmesan cheese
  • 2 cups cooked chicken or turkey, cubed
  • 1 cup cooked rice
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. all-purpose flour
  • 1 cup milk
  • 1 Tbsp. lemon juice
  • 1 cup sour cream

Instructions

  1. Cook broccoli according to package directions; drain.
  2. Arrange broccoli in a 12 x 7 1/2 x 2-inch dish.
  3. Sprinkle with half the Parmesan cheese; top with cooked chicken or turkey.
  4. Season meat with salt and pepper; spoon cooked rice over.
  5. Melt butter or margarine in a saucepan; blend in flour.
  6. Add milk all at once; cook and stir until bubbly.
  7. Cook 2 minutes more; remove from heat.
  8. Stir in lemon juice; fold in sour cream.
  9. Pour sauce evenly over chicken and rice mixture.
  10. Sprinkle remaining Parmesan cheese on top.
  11. Bake in a 400° oven for 15 to 18 minutes.
