Ingredients

  • 3.5 lb. chicken, cut into pieces
  • 1 Tbsp. unsalted butter
  • 1 Tbsp. light vegetable oil

  • 1/2 tsp. oregano
  • 2 bay leaves
  • 2 large onions

Instructions

  1. Rinse the chicken and pat dry.
  2. Preheat oven to 350°F (175°C).
  3. Heat butter and oil in a large skillet over medium heat.
  4. Brown the chicken pieces all over in the skillet.
  5. Season the chicken with salt.
  6. Remove the chicken from the skillet.
  7. Drain 2/3 of the fat from the skillet.
  8. Return the skillet to heat and season with pepper, thyme, and oregano.
  9. Add the chicken back into the skillet and cover with sliced onions.
  10. Sprinkle paprika over the onions.
  11. Cover the skillet and bake in the oven for 2 to 3 hours until the chicken is tender.
