Ingredients

  • 4 cups chicken broth
  • 3 (16 oz each) cans beans (kidney, butter, pinto and/or black-eyed peas), rinsed and drained
  • 3 medium carrots, diced
  • 3 celery ribs, diced
  • 1 lb smoked sausage, cut into 1/2-inch slices
  • 1 large onion, chopped
  • 1/2 cup pearl barley
  • 1/2 cup dried lentils
  • 1 teaspoon hot pepper sauce
  • 1 cup chopped fresh spinach

Instructions

  1. In a 4-quart Dutch oven, combine all ingredients except spinach.
  2. Cover and cook over medium heat for 45 to 60 minutes or until barley and lentils are tender.
  3. Stir in chopped fresh spinach and heat through.
