Sausage Bean Stew

Ingredients
- 4 cups chicken broth ⓘ
- 3 (16 oz each) cans beans (kidney, butter, pinto and/or black-eyed peas), rinsed and drained ⓘ
- 3 medium carrots, diced ⓘ
- 3 celery ribs, diced ⓘ
- 1 lb smoked sausage, cut into 1/2-inch slices ⓘ
- 1 large onion, chopped ⓘ
- 1/2 cup pearl barley ⓘ
- 1/2 cup dried lentils ⓘ
- 1 teaspoon hot pepper sauce ⓘ
- 1 cup chopped fresh spinach ⓘ
Instructions
- In a 4-quart Dutch oven, combine all ingredients except spinach.
- Cover and cook over medium heat for 45 to 60 minutes or until barley and lentils are tender.
- Stir in chopped fresh spinach and heat through.
