Ingredients

  • 2/3 oz. cake yeast
  • 1 cup milk
  • 2 1/4 cups flour
  • 2 teaspoons salt
  • 1 egg
  • 1 1/2 cups currants and raisins
  • 1 tart cooking apple
  • Oil for deep frying

Instructions

  1. Blend the yeast with a little lukewarm milk.
  2. Sift the flour and salt together.
  3. Add milk and mix to form a batter with the yeast and egg.
  4. Stir in currants, raisins, and peeled, minced apple.
  5. Leave the batter in a warm place to rise until doubled in size.
  6. Heat oil to 375°F (190°C).
  7. Dip two metal spoons into the batter to shape balls.
  8. Drop the shaped batter balls into the hot oil.
  9. Fry for 8 minutes until they are golden brown.
  10. Ensure the doughnuts are soft inside and not grease-soaked.
  11. Drain on absorbent paper.
  12. Serve hot, piled on a dish and dusted generously with sifted confectioners' sugar.
