Dutch Pocket Books are savory pastry pockets filled with seasoned beef and vegetables, offering a hearty, flavorful meal perfect for lunch or casual dinners.

Ingredients

  • pastry for 2 double pies
  • 1/2 lb. finely diced beef chuck
  • 2 small potatoes, pared and thinly sliced
  • 2 Tbsp. chopped onion
  • 2 small carrots, thinly sliced
  • 2 small turnips, thinly sliced
  • salt and pepper to taste

Instructions

  1. Divide the pastry into 2 portions.
  2. Roll each portion to 9 inches in diameter.
  3. Place half of the diced beef and sliced vegetables on each piece of pastry.
  4. Fold the pastry over the filling to form a pocket and seal the edges with a fork.
  5. Make slits on top of each pocket to vent steam.
  6. Bake at 450°F for 15 minutes.
  7. Reduce the oven temperature to 350°F and bake for an additional 40 minutes until golden brown.
