Ingredients

  • 1/2 C yellow corn meal
  • 1/3 C brown sugar
  • 1 Tbsp salt
  • 1/4 C oil
  • 2 C boiling water
  • 2 pkgs yeast
  • 1/2 C lukewarm water
  • 3/4 C whole wheat flour
  • 1/2 C rye flour
  • 4 1/4 - 4 1/2 C all-purpose flour

Instructions

  1. Thoroughly combine corn meal, brown sugar, salt, boiling water, and oil.
  2. Allow the mixture to cool to lukewarm.
  3. Soften yeast in 1/2 cup lukewarm water.
  4. Stir the softened yeast into the cooled corn meal mixture.
  5. Add whole wheat flour and rye flour; mix well.
  6. Stir in all-purpose flour to make a moderately stiff dough.
  7. Knead the dough thoroughly.
  8. Let the dough rise until doubled in bulk.
