- Saute chopped onion and garlic in olive oil until fragrant.
- Add crushed tomatoes, oregano, basil, salt, and water; simmer for 30 minutes.
- Cook spiral pasta until tender and drain.
- Combine cooked pasta with the tomato sauce and cottage cheese, stirring well.
- Transfer mixture to a baking dish, sprinkle with Brick or Jack cheese and Parmesan cheese on top.
- Bake at 375°F (190°C) for 20 minutes until cheese is melted and bubbly.
