Ingredients

  • 8 oz. spiral pasta
  • 1 onion
  • 4 cloves garlic
  • 2 Tbsp. olive oil
  • 2 tsp. oregano
  • 1 tsp. basil
  • 1 (28 oz.) can crushed tomatoes
  • 1 tsp. salt
  • 1/2 cup water
  • 2 cups cottage cheese
  • 9 oz. Brick or Jack cheese
  • 1/2 cup Parmesan cheese

Instructions

  1. Saute chopped onion and garlic in olive oil until fragrant.
  2. Add crushed tomatoes, oregano, basil, salt, and water; simmer for 30 minutes.
  3. Cook spiral pasta until tender and drain.
  4. Combine cooked pasta with the tomato sauce and cottage cheese, stirring well.
  5. Transfer mixture to a baking dish, sprinkle with Brick or Jack cheese and Parmesan cheese on top.
  6. Bake at 375°F (190°C) for 20 minutes until cheese is melted and bubbly.
