Ingredients

  • 8 oz. pasta, cooked and drained
  • 1 tbsp. extra virgin olive oil
  • 1 med. onion, chopped
  • 2 cloves garlic, crushed
  • 2 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 c. skim milk
  • 1 1/2 c. fat free Half & Half
  • 1 c. grated Parmesan
  • 2 tsp. dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a small saucepan, sauté onions and garlic in olive oil until browned.
  2. In a large saucepan, melt butter over medium heat.
  3. Add flour and stir to combine.
  4. Slowly add skim milk and Half & Half, simmering and stirring constantly until thickened.
  5. Add Parmesan cheese and Italian seasoning, stirring until cheese melts.
  6. Stir in the tomato, spinach, and onion mixture, heating through.
  7. Pour the sauce over the cooked and drained pasta, toss to combine, and serve.
