Easter Bread (Pascha) is a rich, slightly sweet yeast bread filled with golden raisins and creamy cheese, perfect for festive celebrations and brunch gatherings.

Ingredients

  • 1 cup creamed cottage cheese
  • 4 tablespoons sugar
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 package quick rising dry yeast
  • 2 eggs
  • 2 1/2 cups flour
  • 1 cup golden raisins

Instructions

  1. Heat cottage cheese to lukewarm.
  2. Add butter and eggs to the cottage cheese and mix well.
  3. Combine dry yeast with flour, sugar, salt, and baking soda.
  4. Gradually add the flour mixture to the cottage cheese mixture, beating well after each addition until the dough is stiff.
  5. Dust raisins with flour and add to the flour mixture.
  6. Cover the bowl with a towel and let rise in a warm spot for about 1 hour until doubled in size.
  7. Punch down the dough and turn it into a well-greased 1 1/2-quart casserole dish.
  8. Let the dough rise again for 40 minutes.
  9. Bake at 350°F (175°C) for 40 to 50 minutes until golden brown.
  10. Brush the bread with soft butter and sprinkle with a few pinches of salt.
  11. Cool for 10 minutes in the pan, then transfer to a rack to cool completely.
