Ingredients

  • 1/3 cup self-rising cornmeal
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 1 package fast-rising yeast
  • 1 teaspoon anise seed
  • 1 teaspoon fennel seed
  • 3 cups flour, divided
  • 1 cup water
  • 1/4 cup molasses
  • 3 tablespoons butter
  • 1 lightly beaten egg

Instructions

  1. In a large bowl, combine self-rising cornmeal, 1 cup of flour, sugar, salt, and yeast.
  2. In a saucepan, heat water, molasses, butter, fennel seed, and anise seed to 120°F.
  3. Pour the hot mixture over the dry ingredients.
  4. Beat in the lightly beaten egg and 1 cup of flour.
  5. Add the remaining cup of flour and knead lightly.
  6. Divide the dough into two small bread pans or shape into one loaf in a regular-sized pan.
  7. Place in a warm spot and let rise until doubled in size.
  8. Bake at 375°F for 30 minutes.
