- Cook the pork roast in a slow cooker until done, either all day or overnight.
- Remove the roast and set aside to cool. It should be falling apart.
- Pour the broth into a separate bowl and set aside.
- Remove the cooked pork roast and shred it with your fingers.
- In the slow cooker, add the canned roast beef with gravy, breaking up the chunks.
- Add chopped onion and barbecue sauce to the slow cooker.
- Add the shredded pork to the slow cooker.
- Pour in a splash of lemon juice and 2 cups of the reserved broth.
- Mix everything well.
- Add about 1/4 cup of ketchup and 1/4 cup of mustard, adjusting to taste.
- Season with salt and pepper, then simmer for at least 30 to 45 minutes.
- Add more broth if needed to reach desired consistency.
