Ingredients

  • 4 to 5 lb. pork roast
  • 2 cans Hereford Roast Beef with gravy
  • 16 to 18 oz. hickory flavored barbecue sauce
  • 1 medium onion
  • ketchup
  • mustard
  • lemon juice

Instructions

  1. Cook the pork roast in a slow cooker until done, either all day or overnight.
  2. Remove the roast and set aside to cool. It should be falling apart.
  3. Pour the broth into a separate bowl and set aside.
  4. Remove the cooked pork roast and shred it with your fingers.
  5. In the slow cooker, add the canned roast beef with gravy, breaking up the chunks.
  6. Add chopped onion and barbecue sauce to the slow cooker.
  7. Add the shredded pork to the slow cooker.
  8. Pour in a splash of lemon juice and 2 cups of the reserved broth.
  9. Mix everything well.
  10. Add about 1/4 cup of ketchup and 1/4 cup of mustard, adjusting to taste.
  11. Season with salt and pepper, then simmer for at least 30 to 45 minutes.
  12. Add more broth if needed to reach desired consistency.
