Ingredients

  • 1 lb. ground beef
  • 19 oz. can El Paso enchilada sauce
  • 6 oz. shredded cheese
  • 12 count floured tortillas

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brown the ground beef in a skillet, then stir in 3/4 cup enchilada sauce and 1 cup shredded cheese.
  3. Spoon the beef mixture into each tortilla, roll up, and place seam side down in a 13 x 9-inch baking dish.
  4. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with 1/2 cup shredded cheese.
  5. Bake at 400°F (200°C) for 15 to 20 minutes until heated through and cheese is melted and bubbly.
