Ingredients

  • 1 lb ground beef
  • 1 (17.5 oz) jar enchilada sauce
  • 6 (10-inch) flour tortillas
  • 2 cups shredded Cheddar cheese
  • 1 can refried beans
  • 2 cans chopped green chilies

Instructions

  1. Cook ground beef over medium-high heat until browned.
  2. Pour off fat.
  3. Add 1/2 cup enchilada sauce to the beef and stir.
  4. Spray a baking sheet with cooking spray.
  5. Place one tortilla on the sheet.
  6. Spread 1/3 of the meat mixture over the tortilla and sprinkle with 1/4 cup of cheese.
  7. Top with another tortilla.
  8. Spread half of the refried beans over the tortilla.
  9. Pour half of the enchilada sauce over the beans.
  10. Drain and sprinkle one can of chopped green chilies over the sauce.
  11. Sprinkle 1/4 cup of cheese over the chilies.
  12. Repeat the layers: tortilla, meat mixture, cheese, tortilla, beans, sauce, chilies, cheese.
  13. Finish with a tortilla, remaining meat mixture, and 1/4 cup cheese.
  14. Top with the final tortilla.
  15. Cover with foil.
  16. Bake at 400°F for 40 minutes or until hot.
  17. Remove foil and pour remaining enchilada sauce over the top.
  18. Sprinkle remaining cheese over the sauce.
  19. Bake uncovered for 5 minutes until cheese is melted and bubbly.
  20. Cut into wedges and serve.
