Ingredients

  • 12 corn tortillas
  • 10 oz. can enchilada sauce
  • 1 small onion, chopped
  • 1 pkg. taco seasoning mix
  • 1/2 cup oil
  • 8 oz. package Cheddar cheese, grated
  • 1 lb. ground beef
  • 1 can large pitted black olives, chopped
  • 1 to 2 tsp. Mexene chili powder
  • 1/2 cup water

Instructions

  1. Brown the ground beef and drain excess fat.
  2. Add taco seasoning mix to the beef according to package directions.
  3. In a large saucepan, combine the meat mixture with enchilada sauce, half of the chopped onion, and chopped olives. Simmer on low heat.
  4. In a small skillet, mix Mexene chili powder with water over low heat to create chili sauce.
  5. In a large skillet, heat half of the oil over medium heat and warm each tortilla shell.
  6. Transfer each warmed tortilla to the Mexene chili mixture, turn to coat, then place into a 9x13-inch glass baking dish sprayed with cooking spray.
  7. Lay the tortilla flat in the dish.
  8. Using a slotted spoon, spoon 1 to 2 tablespoons of the meat mixture into the center of each shell.
  9. Sprinkle with chopped onions, chopped olives, and grated cheese.
  10. Fold the sides of the shell toward the center, overlapping slightly.
  11. Arrange the filled shells in the dish, beginning at one end.
  12. Repeat with remaining shells as before.
  13. Pour the Mexene chili mixture into the enchilada sauce in the dish, then pour the remaining sauce over the assembled enchiladas.
  14. Sprinkle with remaining onions, olives, and cheese on top.
  15. Cover with foil and heat in an oven at 250°F until ready to serve.
