These easy refrigerated bran muffins are moist, nutty, and flavorful, perfect for quick breakfasts or snacks, and they stay fresh for weeks when stored properly.

Ingredients

  • 9 cups Raisin Bran cereal
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 quart buttermilk
  • 5 cups flour
  • 5 teaspoons baking soda
  • 1 cup salad oil
  • 1 cup chopped nuts (optional)

Instructions

  1. In a large bowl, mix dry ingredients, including nuts if desired.
  2. In a second bowl, beat eggs well. Add oil and buttermilk to eggs.
  3. Add the egg mixture to the dry ingredients.
  4. Mix well, but only until all ingredients are thoroughly blended.
  5. Put the batter in a tightly covered container and refrigerate.
  6. Allow the batter to chill for at least a few hours or overnight.
  7. Fill muffin tins half full of batter.
  8. Bake at 400°F (200°C) for 15 to 25 minutes, until golden and a toothpick inserted comes out clean.
