- In a large bowl, mix dry ingredients, including nuts if desired.
- In a second bowl, beat eggs well. Add oil and buttermilk to eggs.
- Add the egg mixture to the dry ingredients.
- Mix well, but only until all ingredients are thoroughly blended.
- Put the batter in a tightly covered container and refrigerate.
- Allow the batter to chill for at least a few hours or overnight.
- Fill muffin tins half full of batter.
- Bake at 400°F (200°C) for 15 to 25 minutes, until golden and a toothpick inserted comes out clean.
