Ingredients

  • 12 oz. jar apricot preserves
  • 1/4 cup Dijon-style mustard
  • 1 teaspoon curry powder
  • 4 skinned boned chicken breast halves
  • 1 cup finely chopped lightly salted cashews

Instructions

  1. In a small saucepan, combine apricot preserves, mustard, and curry powder.
  2. Cook over low heat, stirring constantly, until preserves are melted.
  3. Dip chicken in the apricot mixture, then roll in chopped cashews.
  4. Place chicken in a greased 15 x 10 x 2-inch baking pan.
  5. Bake in a preheated 375° oven for 15 to 20 minutes, or until chicken is done.
  6. Bring remaining sauce to a boil.
  7. Serve sauce with chicken.
