Easy Freezer Pickles

Bright and tangy freezer pickles combine sweet vinegar and spices, offering a crunchy snack perfect for summer gatherings or everyday snacking.

Ingredients

  • 7 cups thinly sliced cucumbers
  • 3 medium onions, thinly sliced
  • 1 cup vinegar
  • 2 cups sugar
  • 1 tablespoon celery seed
  • few sprinkles of pickling spices

Instructions

  1. Mix all ingredients and heat until cucumbers change from dark green to light dull green, just a few minutes after the sugar melts.
  2. Place the mixture in the refrigerator for 24 hours.
  3. Next day, transfer the pickles into freezer cups or Ziploc bags.
  4. If using Ziploc bags, thaw before serving and put in a Mason jar to keep in the refrigerator.
