Ingredients

  • 1 cup chopped zucchini
  • 1 cup chopped tomatoes
  • 1/2 cup chopped onions
  • 1/3 cup cheese
  • 1 cup milk
  • 2 eggs
  • 1/2 cup Bisquick
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Grease a pie plate.
  2. Sprinkle chopped zucchini, tomatoes, onions, and cheese evenly in the plate.
  3. In a blender or with a hand beater, beat the remaining ingredients until smooth, about 15 seconds in the blender or 1 minute with a hand beater.
  4. Pour the batter into the prepared plate over the vegetables and cheese.
  5. Bake until a knife inserted in the center comes out clean, about 35 minutes.
  6. Cool for 5 minutes before serving.
  7. Use a 400° oven for baking.
