Ingredients

  • 1 cup zucchini, chopped
  • 1 cup tomato, chopped
  • 1 cup onion, chopped (optional)
  • 1/3 cup Parmesan cheese, grated
  • 1/2 cup reduced fat Bisquick baking mix
  • 1 cup fat-free milk
  • 1/2 cup fat-free, cholesterol-free egg substitute or 2 eggs
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 9-inch pie plate.
  3. Layer zucchini, tomato, onion (if using), and cheese in the pie plate.
  4. In a bowl, stir together the remaining ingredients until blended.
  5. Pour the mixture into the pie plate over the layered vegetables.
  6. Bake for 35 minutes or until a knife inserted in the center comes out clean.
  7. Cool for 5 minutes before serving.
