Ingredients

  • 2 lb. elk or deer meat
  • 1/4 cup soy sauce
  • 1 tablespoon liquid smoke
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup water
  • 1/2 teaspoon seasoned salt

Instructions

  1. Combine soy sauce, liquid smoke, Worcestershire sauce, water, and seasoned salt in a large covered bowl and set aside.
  2. Trim the meat to remove fat and slice into 1/8-inch thick strips.
  3. Mix the meat with the marinade, ensuring all pieces are coated.
  4. Cover and refrigerate overnight to marinate.
  5. Remove oven racks and preheat the oven to the lowest setting, between 150° and 175°.
  6. Spray oven racks with cooking spray and lay the meat strips directly on the racks.
  7. Place foil in the bottom of the oven to catch drips if desired.
  8. Place the racks with meat in the oven and leave the oven door cracked open to allow airflow.
  9. Dry the meat in the oven for 4 to 6 hours until fully dried.
