Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup firmly packed brown sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 1/2 cups mashed bananas or apples, lemon juice and cinnamon, or oranges, diced or other fresh or frozen fruit

Instructions

  1. Preheat oven to 400°F.
  2. Grease muffin pan.
  3. Mix all ingredients together in a bowl.
  4. Fill muffin pan cups with batter.
  5. Bake for 25 minutes.
