Easy Old Fashioned Split Pea Soup

Ingredients

  • 1 1/2 c. dry yellow split peas
  • 2 1/2 c. water
  • 2 (10 oz. each) cans condensed chicken broth, undiluted
  • 2 c. coarsely chopped, cooked ham (I use ham shanks)
  • 1 c. chopped carrots
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 2 Tbsp. butter
  • 3 c. milk
  • salt and pepper
  • croutons

Instructions

  1. Wash peas and place in a large saucepan.
  2. Add water, chicken broth, ham shanks, carrots, onion, celery and butter to peas. Bring to a boil.
  3. Reduce heat.
  4. Cover and simmer 1 1/2 hours. Stir in milk.
  5. Add salt and pepper to taste.
  6. Garnish with croutons and parsley.
