Ingredients

  • 1 c. flour
  • salt (as desired)
  • 1/4 tsp. pepper
  • 2 tsp. paprika
  • 1/2 c. shortening (half butter)
  • 1 frying chicken, cut in serving pieces or equivalent pieces of your choice

Instructions

  1. Heat oven to 425°.
  2. Melt shortening in a 13 x 9 1/2-inch pan.
  3. Mix flour, salt, pepper, and paprika in a paper or plastic bag.
  4. Add chicken pieces to the bag and shake to coat.
  5. Place chicken skin-side down in the pan and bake for 20 minutes.
  6. Turn chicken pieces and bake for another 20 minutes or until tender.
  7. For barbecued oven chicken, omit the dry coating and baste with barbecue sauce, continuing to baste every 15 or 20 minutes.
