Easy Raw Broccoli Salad

A crisp, fresh raw broccoli salad with tangy lemon and mustard dressing, complemented by juicy tomatoes, perfect for light lunches, picnics, or healthy side dishes.

Ingredients

  • 1 1/2 lb. broccoli
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 cup salad oil
  • 2 Tbsp. lemon juice
  • 4 medium tomatoes
  • 1/3 cup sour cream
  • 1 tsp. prepared mustard

Instructions

  1. Wash and drain broccoli.
  2. Chop broccoli finely.
  3. Put in a large bowl and sprinkle with salt and pepper.
  4. Combine salad oil and lemon juice; pour over the broccoli.
  5. Chill for at least 30 minutes, stirring occasionally.
  6. Peel tomatoes and cut into small pieces; discard seeds.
  7. Add tomatoes to the broccoli.
  8. Combine sour cream and prepared mustard; pour over the mixture.
  9. Mix well.
  10. Spoon into lettuce cups and serve immediately.
