Ingredients

  • 2 eggs
  • 1 1/2 c. milk
  • 3/4 c. melted shortening
  • 1 medium size green pepper, chopped
  • 1 medium size onion, chopped
  • 1 small can or 1/2 large can pimientos
  • 1 1/2 c. grated American cheese
  • 2 c. flour
  • 1 c. corn meal
  • 1 tsp. salt
  • 4 Tbsp. sugar
  • 2 Tbsp. baking powder

Instructions

  1. Sift dry ingredients together and mix onion, pepper, and pimiento with them.
  2. Blend eggs, milk, and melted shortening and stir into dry ingredients just long enough to mix.
  3. Fold in grated American cheese.
  4. Pour batter into a well-greased muffin pan.
  5. Bake at 400°F for 25 to 30 minutes until golden brown.
