Ingredients

  • salt and pepper to taste
  • 1 or 2 cloves garlic, minced
  • 1 broiler-fryer (about 2 1/2 lb.), cut up
  • 1/2 cup cream sherry or Madeira
  • juice of 1 small lemon (about 1 1/2 to 2 Tbsp.)
  • 1/4 cup butter, melted
  • 1 tsp. rosemary

Instructions

  1. Season the chicken with salt and pepper.
  2. Place the chicken in a shallow baking pan.
  3. Mix the remaining ingredients: garlic, cream sherry or Madeira, lemon juice, melted butter, and rosemary.
  4. Pour the mixture over the chicken.
  5. Roast in a preheated 350°F oven, basting every 15 to 20 minutes, for 45 to 60 minutes or until golden brown and fork-tender.
