Ingredients

  • 2 c. water
  • 3 c. fresh broccoli florets
  • 1 c. diced carrots
  • 1/2 c. chopped onion
  • 1 c. coarsely chopped fresh cauliflower
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. dried dillweed
  • 1/8 tsp. pepper
  • 1 c. skim milk
  • 3/4 c. shredded low-fat Cheddar cheese

Instructions

  1. Bring water to a boil in a large saucepan; add 2 cups of broccoli, 1/2 cup of carrots, and chopped onion.
  2. Cover, reduce heat, and simmer for 15 minutes or until vegetables are tender.
