Ingredients

  • 1 lb Ricotta cheese
  • 2 c shredded Mozzarella cheese
  • 1 egg
  • 1 pkg frozen chopped spinach, defrosted
  • 1 tsp salt
  • 1 tsp oregano
  • dash pepper
  • 32 oz spaghetti sauce
  • 9 lasagna noodles, uncooked

Instructions

  1. Preheat oven and cook lasagna noodles according to package instructions, then drain and set aside.
  2. In a large bowl, mix Ricotta cheese, 1 cup Mozzarella cheese, egg, defrosted chopped spinach, oregano, salt, and pepper until well combined.
  3. Spread a layer of spaghetti sauce on the bottom of a baking dish.
  4. Layer uncooked lasagna noodles over the sauce.
  5. Spread half of the cheese and spinach mixture over the noodles.
  6. Repeat layers: sauce, noodles, remaining cheese mixture, ending with a layer of sauce and remaining 1 cup of shredded Mozzarella cheese on top.
  7. Cover with foil and bake in a preheated oven at 375°F (190°C) for 35-40 minutes.
  8. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
  9. Let stand for 10 minutes before serving.
