- Preheat oven and cook lasagna noodles according to package instructions, then drain and set aside.
- In a large bowl, mix Ricotta cheese, 1 cup Mozzarella cheese, egg, defrosted chopped spinach, oregano, salt, and pepper until well combined.
- Spread a layer of spaghetti sauce on the bottom of a baking dish.
- Layer uncooked lasagna noodles over the sauce.
- Spread half of the cheese and spinach mixture over the noodles.
- Repeat layers: sauce, noodles, remaining cheese mixture, ending with a layer of sauce and remaining 1 cup of shredded Mozzarella cheese on top.
- Cover with foil and bake in a preheated oven at 375°F (190°C) for 35-40 minutes.
- Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
- Let stand for 10 minutes before serving.
