Ingredients

  • 1 cup egg whites (about 5 to 6 eggs)
  • 4 egg yolks
  • 1 cup non-nutritive sweetener (sugar equivalent)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Beat egg whites very stiff until peaks form.
  3. Beat egg yolks until very light and fluffy.
  4. Add half the sweetener to the egg whites and half to the yolks.
  5. Combine the yolks and whites and beat vigorously.
  6. Sift together the flour and baking powder.
  7. Gently fold the flour mixture into the egg mixture.
  8. Add vanilla extract and fold gently to mix.
  9. Pour the batter into an angel food cake pan.
  10. Bake for 40 minutes or until a tester inserted into the center comes out clean.
