Ingredients

  • 1 1/2 cups sugar
  • 1 cup butter
  • 4 eggs
  • 2 cups flour
  • 1 tablespoon lemon extract or juice
  • 1 can cherry pie filling
  • confectioners sugar

Instructions

  1. Gradually add sugar to butter in a large mixer bowl, creaming at medium speed until light and fluffy.
  2. At medium speed, add eggs one at a time, beating well after each addition.
  3. At low speed, add flour and lemon extract to the mixture.
  4. Pour the batter into a well-greased 15 x 10 x 1-inch jelly roll pan.
  5. Mark off the batter into 20 squares.
  6. Place one heaping tablespoonful of cherry pie filling in the center of each square.
  7. Bake at 350°F (175°C) for 45 to 50 minutes.
  8. While warm, sift confectioners sugar over the cake.
  9. Cool completely, then cut into squares and serve.
