Ingredients

  • 2 large cans crushed tomatoes
  • 2 to 3 medium carrots
  • a handful of fresh asparagus
  • 6 leaves fresh basil
  • 2 or 3 stalks celery
  • 2 buds garlic
  • 3 or 4 Tbsp. olive oil
  • salt and pepper

Instructions

  1. Saute garlic, celery, carrots, and other vegetables in olive oil slowly.
  2. Can cover the pan until the vegetables are tender.
  3. Add chopped basil and crushed tomatoes when vegetables are nearly done.
  4. Use fresh tomatoes when in season.
  5. Season with salt and pepper to taste and let simmer until ready to serve.
  6. Serve over cooked pasta or split baked potatoes.
