Ingredients

  • 1 lb. navy or Great Northern beans, washed and picked
  • 1 cup chopped onion
  • 1/2 cup chopped green onions
  • 1 stalk chopped celery
  • 1 chopped carrot
  • 3/4 cup chopped green bell pepper
  • 3/4 cup chopped red bell pepper
  • 2 cloves minced garlic
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. thyme
  • 1/4 tsp. cayenne pepper
  • 2 bay leaves
  • 1/2 cup snipped parsley
  • 2 1/2 oz. black olives

Instructions

  1. Place beans in a large pot with 12 cups of water.
  2. Add all ingredients except parsley and olives.
  3. Bring to a boil, then reduce heat and simmer for 3 hours.
  4. Five minutes before the beans are finished, add parsley, olives, salt, and pepper to taste.
  5. Serve over cooked white rice.
